Use organic ingredients when possible

3 small bananas mashed (about 1/2 cup)

1 tsp vanilla essence

2 tbsp EV coconut oil (sit jar in hot water to melt)

1/2 cup desiccated coconut

1 cup almonds

1/2 cup rolled oats

1 handful goji berries

 

Preheat oven to 170℃ fan forced.

Place almonds and oats in processor and process till fine.

Add rest of ingredients and mix well.

Shape into cookies and place on tray lined with baking paper.

Bake for 20 minutes or until browned.

Makes about 10 cookies.  Store in air tight container in fridge.

For Gluten Free version, replace oats with quinoa flakes.
