This is a great alternative to other milk – it’s easy to digest and full of nutrients!

 

Use organic ingredients where possible

1 cup pesticide free almonds

3-4 cups of spring water (plus extra for soaking)

4 dates, honey, vanilla, cinnamon (optional)

 

Place almonds in a bowl and cover with water.  Leave to soak over night.

Drain almonds and discard water.

Place almonds in blender with 3-4 cups of spring water.

Add softened dates, or a little honey/vanilla/cinnamon if desired.

Blend on medium-high speed for a minute or two.

Place strainer over bowl and pour milk into bowl.  Use a spoon to press out moisture from pulp.  You can alternatively use a nut milk bag to strain the milk – these can be purchased from health food shops or online.

Pour milk into airtight glass bottle and store in fridge.  The milk will last for a few days.

 

The pulp can be used in baking, or dry out on a baking sheet in a low oven and use for crumble toppings or to make granola!
