Use organic ingredients where possible

2 large ripe tomatoes, diced in small pieces

1/2 small red onion, finely diced

1 small clove garlic, minced

6 marinated olives, pitted and diced

3/4 large avocado, diced

Lemon juice

Extra virgin cold pressed olive oil

salt and pepper

10 basil leaves, chopped finely

 

There is a bit of chopping involved in this salsa, but that is about the only work required!

Place all ingredients into a bowl, adding a squeeze of lemon juice and a drizzle of olive oil.

Add salt and pepper to taste.Ā  Mix well.

You can also add a finely chopped chilli for a spicy salsa, or a few chopped sun dried tomatoes for extra flavour.

Serve with brown rice crackers, lettuce leaves, toasted pitta or organic natural corn chips.
