Use organic products where possible
2 cups spelt flour (I used half wholemeal and half white)
3 tsp baking powder
2 tsp ground cinnamon
1 tsp ground cloves
1/2 tsp ground ginger
1 tsp ground nutmeg
1 large carrot, grated (about 1 cup)
1/2 cup raisins
1/4 cup sunflower seeds
3/4 cup oat milk
1/3 cup extra virgin organic coconut oil, plus extra for greasing tray
1/2 cup raw/bush honey
1 tsp vanilla essence

Preheat oven to 180℃. Grease 12 muffin tray with oil.
Mix flour, baking powder and spices together.
Stir in carrot, raisins and sunflower seeds.
Place oil and honey in jug over hot water to liquify. Add milk and vanilla.
Pour wet ingredients into dry ingredients and mix well.
Spoon into muffin tray and cook 20-25 minutes.
Makes 12 muffins.
